柴犬エイト (Tokyoあんこガトー栗入り)
柴犬マドレーヌを改良して完成した「ねこのおくりもん」オリジナルの新しい焼き菓子です。
米粉とさとうきび由来の低GIきび糖とココナッツシュガーを使用した甘さ控えめの生地に、あんこを入れて味のアクセントをつけました。
しっとりとやわらかな食感と、やさしい甘さの中に広がるあんこの風味が絶妙なバランス。和と洋がやさしく重なり合う、どこかほっとする味わいです。重たさを感じさせない軽やかな口あたりで、気づけばもうひとつ手が伸びてしまうおいしさに仕上げました。
米粉を使って、時間が経ってもしっとり感を出すために辿り着いた秘密のレシピ。一度は諦めたものの、何度も試作を繰り返して完成しました。

Shiba Inu “Eight” – Tokyo Anko Gâteau (Sweet Red Bean & Chestnut)
This is a new original baked treat from Neko no Okurimon Tokyo, created after many improvements to our madeleine recipe.
It is made with rice flour, low-GI cane sugar, and coconut sugar.
For the fat, we use only a small amount of rice oil and a touch of butter for aroma, resulting in a light and delicate texture. It’s the kind of snack you can happily keep nibbling on♪
To make sure you can still fully enjoy the deliciousness, we tested the recipe again and again and finally discovered our secret way to keep it moist without increasing the oil.
Because the recipe is lighter and healthier, we also added thoughtful flavor accents so it never feels lacking.
The plain flavor contains gently sweet red bean paste for a comforting taste.
We carefully adjusted the sweetness balance so that the sugar content stays as low as possible while still tasting rich and satisfying.
Gentle on the body, yet truly delicious.
That is the idea behind this carefully crafted special baked treat.
